Job Overview:
The Commissary Supervisor is responsible for overseeing the daily operations of the commissary, ensuring that all food production, inventory management, and staff activities meet the company’s quality standards and deadlines. This role ensures compliance with food safety regulations and contributes to the efficient supply of food products to all outlets.
Key Responsibilities:Operations Management:
- Plan, organize, and oversee the daily production schedule for all commissary operations.
- Monitor food preparation and cooking processes to ensure consistency and quality standards are met.
- Ensure timely delivery of prepared products to respective outlets or clients.
Inventory and Stock Management:
- Manage inventory levels by tracking stock, conducting regular audits, and ensuring accurate recording of incoming and outgoing items.
- Coordinate with suppliers for timely and cost-effective procurement of raw materials and supplies.
- Minimize wastage and ensure proper storage of inventory in line with food safety regulations.
Team Supervision:
- Lead, mentor, and supervise commissary staff, including cooks, kitchen aides, and warehouse personnel.
- Schedule shifts and allocate tasks to ensure efficient workflow.
- Provide training to staff on operational procedures, safety standards, and quality requirements.
Quality Control and Food Safety:
- Ensure compliance with food safety standards, including HACCP and local health regulations.
- Conduct quality checks on raw materials, in-process items, and finished products.
- Maintain cleanliness and hygiene standards across all commissary areas.
Reporting and Administration:
- Prepare and submit daily production and inventory reports to management.
- Assist in budgeting and cost control by monitoring expenses and identifying areas for optimization.
- Collaborate with other departments, such as purchasing and logistics, for smooth coordination of operations.
Qualifications: Education and Experience:
- Bachelor’s degree in Culinary Arts, Hospitality Management, Business Administration, or a related field.
- At least 3 years of experience in commissary or kitchen operations, with at least 1 year in a supervisory role.
Skills and Competencies:
- Strong leadership and team management skills.
- Excellent organizational and time-management abilities.
- Knowledge of food safety regulations and quality assurance procedures.
- Proficiency in inventory management and production planning.
- Effective communication and problem-solving skills.
