Job Description
Takes care of all physical aspects of the cold kitchen operation, supervision, preparation, and serving of food, equipment maintenance and cleaning, quality control, and cleanliness of the work area.
Prepares all cold food according to recipes, guidelines, and standards set by the Executive Chef or according to venue standards.
Ensures that the Kitchen has a proper level of par stocks and supplies according to daily production sheets (based on house count), daily menus, and banquet events.
Checks and controls the proper storage of products, checking on portion control, especially in specific cuts of meat, to maintain quality products.
Prepares cold food items like salads, cold cuts, salad dressings, etc.
Collaborates with the Executive Chef in menu development and implementation of banquet menus.
Fills in for other chefs when colleagues are on a day off.
Executes knife skills — cutting, chopping, carving, dicing, etc.
Assists the Executive Chef in training new employees.
Performs general cleaning tasks using industry-standard cleaning products that adhere to health standards.
Properly labels and dates all products to ensure safekeeping and sanitation.
Always keeps all refrigeration, equipment, storage, and working areas in clean, working condition to comply with health regulations.
